Here is the recipe for the Poppy Seed Citrus Cake we had last night:
1 lemon cake mix
3 eggs
1 1/3 cups orange juice
1/2 cup vegetable oil
1-2 Tbl poppy seeds
1 tsp grated lemon peel
1 tsp grated orange peel
Combine the cake mix, eggs, orange juice and oil; beat on medium speed for 2 minutes. Fold in poppy seeds, lemon and orange peel. Pour into a well-greased and floured 10-in fluted tube pan. Bake at 350 for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
Glaze:
2 cups powdered sugar
3-5 Tbl orange juice
1/2 tsp grated lemon peel
1/2 tsp grated orange peel
In a small bowl, combine the powdered sugar and orange juice until smooth. Drizzle over cake and sprinkle with lemon and orange peel
