Banana Bread

This banana bread recipe is from my daughter-in-love Katie's grandma. It never fails.
Cream together:
1/2 cup vegetable oil
1 cup sugar
Add 2 eggs and beat well
Add 3-4 mashed ripe bananas (I always use four and I leave some of them in small chunks.)
Stir in:
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 cup chopped nuts (optional)
Pour into 2 greased and floured bread pans - should not be more than 2/3 full
Bake at 325 degrees for about 50 minutes, or until toothpick poked inside comes out clean

Frosting: Stir about 1 1/2 cups of powdered sugar with 2-3 T of lemon juice until frosting consistency and spread on top of completely cooled bread.

The bread is fine without the frosting, but so much better with it.
